There are only forty-two extraordinary FISAN Gran Reserva Acorn-Fed Hams pertaining to the vintage year 2011.
The VINTAGE YEAR 2011 LIMITED EDITION is a selection of forty-two hams from among the most extraordinary FISAN Gran Reserva Acorn-Fed Iberico Hams, which have all been cured during a period of sixty months in natural cellars with scarce light, scarce noise, much care and tremendous amounts of patience.
When this Ham is consumed at a temperature of about 22ºC, more than four years after being selected, one can easily say that perfection has been achieved.
We remind you that to enjoy this ham it should always be hand-carved and within a brief period of time, five or six days at the most, this being due to the fast oxidation it undergoes once it has been opened.
Vintage Year 2011:
The “montanera” (free-ranging period when the pigs eat acorns) this year arrived with an abundance of fruits, which were quite large. The heavy rainfall in November and December also gave rise to meadowlands overflowing in tall and abundant grass that incites and favors the mobility of the pigs. Also, the cold months of December and January assured good conservation of the acorns right through to February and March, which facilitated full profiting of the fruit on the part of the pigs.
